Air Fried Cod with Mediterranean Quinoa Salad - Savor the Mediterranean flavors with Baked Cod paired with a vibrant quinoa salad. The cod, baked to perfection, is adorned with a lemony herb topping. Paired with a quinoa salad featuring cherry tomatoes, olives, and feta, this dish is a wholesome and heart-healthy choice.

For the Baked Cod:

• 4 cod fillets
• Zest and juice of 1 lemon
• 2 tablespoons olive oil
• 1 tablespoon fresh parsley, chopped
• 1 teaspoon dried oregano
• Salt and black pepper to taste

For the Mediterranean Quinoa Salad:

• 1 cup cooked quinoa
• Cherry tomatoes, halved
• Kalamata olives, sliced
• Feta cheese, crumbled
• Red onion, finely chopped
• Fresh basil, chopped
• Balsamic vinaigrette dressing
• Instructions:
  1. Preheat your Air Fryer to 375°F (190°C).
  2. In a bowl, mix lemon zest, lemon juice, olive oil, chopped parsley, dried oregano, salt, and black pepper.
