Spinach and Mushroom Breakfast Quesadilla - Fuel your morning with a protein-packed Spinach and Mushroom Breakfast Quesadilla cooked to perfection in the air fryer. A harmonious blend of sautéed spinach, mushrooms, and melted cheese encased in a crispy tortilla shell.
For the Quesadilla Filling:
- 1 cup fresh spinach, chopped
- 1/2 cup mushrooms, sliced
- 1/4 cup diced onions
- 1/2 cup shredded cheese (cheddar or mozzarella)
For Assembly:
- 2 large flour tortillas
- Cooking spray or olive oil
Instructions:
Prepare the Filling:
In a skillet, sauté chopped spinach, sliced mushrooms, and diced onions until the vegetables are tender. Remove from heat and let it cool slightly. Mix in shredded cheese.
Assemble:
Place a tortilla on a flat surface. Spread the spinach and mushroom mixture evenly over one half of the tortilla. Fold the other half over to create a half-moon shape.
Air Fry:
Preheat your air fryer to 375°F (190°C). Lightly grease the Diamotech Crisper Basket with cooking spray or olive oil. Place the quesadilla in the basket.
Cook for 5-7 minutes or until the quesadilla is golden brown and the cheese is melted.
Serve:
Carefully remove the Spinach and Mushroom Breakfast Quesadilla from the air fryer. Let it cool for a minute, then slice and serve. Optional: dip in salsa or sour cream.
