Veggie Breakfast Burrito with Avocado Salsa - Start your day with a burst of flavors by savoring a Veggie Breakfast Burrito accompanied by a zesty Avocado Salsa.
For the Burrito:
- 1 large flour tortilla
- 2 large eggs, scrambled
- 1/2 cup black beans, drained and rinsed
- 1/4 cup diced bell peppers
- 1/4 cup diced red onion
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
For the Avocado Salsa:
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt to taste
Instructions:
- In a Diamotech frying pan , heat olive oil over medium heat. Sauté bell peppers and red onion until softened.
- Add scrambled eggs, black beans, and season with salt and pepper. Cook until eggs are set.
- Warm the tortilla and spoon the egg mixture onto it. Sprinkle with cheddar cheese and fold into a burrito.
- In a bowl, combine diced avocado, cherry tomatoes, cilantro, lime juice, and salt to make the Avocado Salsa.
- Serve the Veggie Breakfast Burrito with a side of Avocado Salsa.
