These Teriyaki Pineapple Chicken Skewers are a delightful fusion of sweet and savory flavors. Marinated to perfection, the chicken and pineapple chunks are threaded onto skewers and air-fried to golden-brown perfection. A generous brush of homemade teriyaki sauce adds that irresistible caramelized finish.
Ingredients:
For the Teriyaki Marinade:
- 1/2 cup soy sauce
- 1/4 cup pineapple juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch (optional, for thickening)
For the Skewers:
- 1.5 pounds boneless, skinless chicken breast or thighs, cut into 1-inch cubes
- 1 cup pineapple chunks (fresh or canned)
- Wooden skewers, soaked in water for 30 minutes (to prevent burning)
Instructions:
- Prepare the Teriyaki Marinade:
- In a small saucepan, combine the soy sauce, pineapple juice, honey, minced garlic, and grated ginger.
- If you want a thicker sauce, mix the cornstarch with a little water to create a slurry and add it to the sauce.
- Heat the mixture over low heat, stirring constantly until it thickens. Remove from heat and let it cool.
- Marinate the Chicken:
- Place the chicken cubes in a bowl and pour half of the teriyaki marinade over them.
- Reserve the other half of the marinade for later.
- Toss the chicken to ensure it's well coated in the marinade.
- Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours) to allow the flavors to infuse.
- Assemble the Skewers:
- Preheat your air fryer to 375°F (190°C).
- Thread the marinated chicken pieces and pineapple chunks onto the soaked wooden skewers, alternating between chicken and pineapple.
- Air Fry the Skewers:
- Place the skewers in the EaZy MealZ Air Fry Crisper Basket, leaving some space between them for even cooking.
- Air fry for 10-12 minutes, turning the skewers halfway through the cooking time, or until the chicken is cooked through and has a nice char on the outside.
- Glaze with Reserved Teriyaki Sauce:
- In the last few minutes of cooking, brush the skewers with the reserved teriyaki sauce to glaze them.
- Continue cooking until the sauce caramelizes slightly and the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
- Serve:
- Carefully remove the skewers from the EaZy MealZ Air Fry Crisper Basket.
- Serve the Teriyaki Pineapple Chicken Skewers hot, garnished with chopped fresh cilantro or green onions, if desired.
- You can also serve them with steamed rice or a side of vegetables for a complete meal.
