Ingredients:
For the Air-Fried Eggplant:
- 2 large eggplants, sliced into 1/2-inch rounds
- Salt, for sweating the eggplant
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- Olive oil cooking spray
For the Quick Tomato Sauce:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 28 oz (800g) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped (optional)
For Assembling:
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions:
For the Air-Fried Eggplant:
- Sweat the Eggplant:
- Sprinkle salt on the eggplant slices and let them sit for about 30 minutes. Pat them dry with paper towels.
- Prepare Breading Station:
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan.
- Bread the Eggplant:

- Air Fry:
