This satisfying creation is an ideal morning treat, combining the freshness of spinach with the richness of feta for a delightful start to your day. As the omelette takes shape, a generous sprinkle of crumbled feta cheese adds a creamy tanginess that marries beautifully with the earthy spinach. The gentle fold creates a comforting embrace, allowing the eggs to fully set and the feta to melt into a luscious filling. 

Ingredients:

  • 3 large eggs
  • 1/4 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons milk or water
  • Salt and pepper to taste
  • 1 tablespoon butter or cooking oil
  • Optional: chopped fresh herbs (such as parsley or dill) for garnish

Instructions:

  • Prepare the Ingredients:
    • Crack the eggs into a bowl and whisk them together with milk or water until well combined. Season with a pinch of salt and pepper.
    • Chop the fresh spinach and crumble the feta cheese. Set aside.
  • Preheat the Pan:
    • Place your DiamoTech Frying Pan on the stove over medium heat. Add the butter or cooking oil and let it melt, coating the bottom of the pan evenly.
  • Cook the Spinach:
    • Add the chopped spinach to the  DiamoTech Frying Pan and sauté for about 1-2 minutes until it wilts and becomes tender. Spread it evenly across the pan.
  • Pour the Egg Mixture:
    • Pour the whisked egg mixture over the sautéed spinach. Let it spread and settle into an even layer.
  • Add Feta Cheese:
    • Sprinkle the crumbled feta cheese evenly over one half of the omelette.
  • Fold the Omelette:
    • Once the edges of the omelette start to set and the bottom is lightly cooked, use a spatula to gently fold the other half of the omelette over the side with the feta cheese.
  • Finish Cooking:
    • Continue cooking for another 1-2 minutes, allowing the eggs to fully set and the feta cheese to melt slightly.
  • Serve:
    • Carefully slide the omelette onto a plate. Garnish with chopped fresh herbs if desired.
  • Enjoy:
